Mirchi Ka Salan

A traditional Hyderabadi Salan is made in a Shallow wide flat bottom vessel. The salan is a sealed in this vessel and kept on low fire to cook with all the flavours trapped inside to give that authentic rich taste. Ingredients Green Chillies thick & long - 250 gm For dry paste/masala: Till/Sesame Seeds 1/2 cup Groundnuts 1/2 cup Dry desiccated Coconut 3/4 cup Dry roasted Coriander Seeds/ Dhania powder 1 tsp For Gravy: Oil 1/2 cup Onion 3 large sliced slightly thick into semi Circular rings Ginger garlic paste 2 tsp Salt 1 tbsp Red Chilli Powder 1 1/2 tsp Turmeric 1/2 tsp Cilantro 3 tbsp Thick Tamarind pulp 3tbsp For Tempering/Baghaar: Cumin Seeds 2 1/2  tsp Curry leaves  2 Springs Mustard Seeds 1/2 tsp Method Wash, drain, then pat dry and slit the green chillies. Brinjal with Curd

Brinjal with Curd very easy and delicious  Brinjal 4 to 5 cut into slices Hung Curd 1 cup Salt Ajwain Cumin Seeds Curry Leaves Curd Chillies (Dahi ki Mirchi) Oil Ginger-garlic Paste For making Curd you will need Onion 1 Chopped Salt Coriander and mint leaves - 1 cup chopped Add these with ingredients in Curd and mix well. Keep aside. Method Rub Brinjal with salt, turmeric and red chilli powder. Keep aside. Heat oil in a Pan, when oil gets warm simmer the heat and add ajwain seeds, ginger garlic paste, red chilli powder, turmeric powder and salt. Mix well and add brinjal slices. fry it well for 3 minutes and cover the lid of pan for 5 minutes. Now open the lid and check if brinjals are done. Add these fried brinjal in Curd. Mix slowly(don't over mix ) Serve it with Rice or Chapati.

Cabbage Chana Dal (Bengal Gram Lentil)

Cabbage with chana dal very easy to make and delicious in taste.. Ingredients Cabbage shredded one One small cup Chana dal Green chilli 4 to 5 Ginger garlic paste 1tsp Turmeric 1/2 tsp Salt Oil Cardamom 4 Cloves 2 Coriander leaves 1 bunch Curry leaves 5 Chana dal soaked in water for 10 to 15 minutes Method Heat oil in pressure cooker add oil. Now add cardamon,cloves,green chille than add soak Chana dal turmeric powder,ginger garlic paste. mix well, Now add cabbage and half cup water.Close the lid of cooker and let it whisle for 2 0r 3 depend on your cooker types. Open the lid and add salt mix well. At lastly put coriander and curry leaves simmer it on low heat for 3 minutes and its done Voils! You can serve it with chappati.. Best for Breakfast..

Moong Dal

Delicious Moong Dal...Very yummy made by my mom <3 Ingredients  2 Cups moong dal Turmeric powder 1/4 tsp Ginger garlic 1/2 tsp  Green chillies 4-6  Tomatoes 2  Onion 1  Cumin powder 1/2 tsp (jeera powder Method  Roast Moong dal for 2 minutes until light brown on low heat. Clean & wash moong dal in water. Drain and keep aside. Combine the dal,salt,turmeric powder,ginger garlic paste,green chillies,tomatoes and 4 cups of water in a pressure cooker and pressure cook for 2 whistles. Allow the steam to escape before opening the lid.keep aside. Tempering (Bagar) Heat oil in a pan add the onion & fry untill dark brown  (like biryani fried onion). Sprinkle cumin powder.garnish dal with the fried onion and bagar.

Mash Dal / Black Gram Lentil

Black gram aka mash ki dal is my favourite lentil and it is good for ur health...Must have this lentil in winter and rainy season.... Ingredients Mash dal  2 cups Green chilli 6 slit Mint leaves 1 cup Coriander Leaves 1 cup Black pepper powder 1/2 tsp Salt Ginger garlic paste 1tsp Turmeric powder 1/2 tsp Tomatoes 1 Oil Method For Dal Wash mash dal nicely. Take Pressure cooker and add full 2 cups water. Close the lid and led with whistle and let it cooked for 3 to 5 minutes as per your cooker 3 TO 5 minutes close the cooker and set aside. Now lets begin with tempering part take a deep pan or kadai. and cooking oil to it. Now add onions and fry until crispy. Then add some salt, green chillies and fry it on low heat. After its done take  out fried onions and green chillies and set aside. Then next step in the same pan add chopped tomatoes,turmeric,ginger garlic paste,coriander and mint leaves.
