Rogan Josh (Mughlai Recipe )
A Homemade Recipe made it for my Guests ant they loved it.
Ingredients :
Mutton 1/2 kg
Curd one cup mix with one cup of water
2 big onions for paste
Ginger garlic paste 1tbsp
Salt to taste
Turmeric 1/4 tsp
Red Chilli Powder 1 tsp
Mutton Stock 1(Optional)
Almonds 8
Cashew nuts 7
Saffron 1 pinch
Oil 4tbsp
Cardamon 2
Cloves 2
Cinnamon 2
Bay leaf 2
Shazeera 1/2 tsp
Handful of Coriander leaves
Handful of Mint leaves
Green Chilli 4
Method
Step 1 : Grind onion, 2 green chili, half coriander, half mint and make a paste.
Grind almonds, cashew nuts make a paste.
Marinate mutton with curd, red chilli powder, turmeric powder, ginger garlic paste, mutton stock,
salt, onion paste, almond and cashew nut paste. mix it well.
Step 2: Take a Pressure Cooker and add oil in it.
When oil gets hot add cardamon, cinnamon, cloves, bay leaf, shahzeera, fry it for minute and add marinated mutton in cooker, mix it well n stir it again for 5-10 minutes. Put 2 small cup of water and cover the lid and leave it to whistle, after 4 whistles now open the lid and mix well till oil get separated.
Step 3 : Dish out in a serving dish and garnish with green chilli, coriander & mint leaves and top with some cashew nuts.
