This bright rainbow cake can be used for get-

togethers
and just about any time you want to create a splash

of colours.
It looks and tastes great and is quite easy to whip

up!

Ingredients

1 1/2 cup sugar
1 tbsp baking powder
3/4 cup milk
1tsp vanilla extract
125g butter, soften
3 eggs, lightly beaten
Food colouring
red
yellow

green
blue
orange
purple

You can also use colors of your own choice

ButterCream Icing
200g butter, soften
2tbsp vanilla extract
2 1/2 cups icing sugar mixture
2 tbsp milk

Method
To make the cake batter, put the flour, sugar and

baking powder into a bowl.

Using a mixer, beat in the milk, vanilla, butter and

eggs
until combined.Beat for 4 minutes.

Divide the mixture evenly between seven  bowls.

Using the food colouring tint each bowl of mixture

the colors of the rainbow.

Then pour into baking cake tin and bake one by one

all the colour cakes separately.Bake until center of

cake bounce back after being touched lightly.

Remove from tins and cool on wire rack until it is

pale and fluffy.

Gradually beat in the vanilla and icing mixture, half

a cup at a time.Beat in the milk at the end until

well incorporated.

To assemble, place the cake with the red bottom on a

serving plate and spread icing over the top using a

flat-bladed knife.Place the second cake on top and

cover the whole cake with icing.Repeat the process

and work your way up, till the purple colour on top

or the colours of your own choice and then cover the

cake completely with the frosting.

You can also put another color on the side if you

wish and decorate the top of the cake with chocolate

shavings.

Notes: This is no-fuss cake. The amount of food

coloring you add is up to your discretion. You can use

liquid or food powder coloring fo this recipe.Just

add a little at atime and mix until you have the

color that you want.I used red and blue to make

purple mixture and red and yellow to make orange

mixture.
